Spam Fried Rice
Spam Fried Rice: Submitted by: Tracy Artero Smith | Date Added: 11 Nov 2013 Ingredients:

1 can low-sodium Spam - diced
2-4 cups day old rice
1 medium sweet onion - chopped
3 eggs beaten - lightly salted/peppered
1/4-1/2 cup low sodium soy sauce to desired taste.

1 bunch green onion - sliced (reserve until end)
1 cup frozen peas and carrots or mixed vegetables (optional)

Cooking Instructions:

Heat large non-stick frying pan or pot on medium heat.
Add Spam and onions together. Sauté until onions are translucent.
Add additional veges if desired at this time.
Add rice - to same pan, mash with spatula if clumped. Mix in spam and onions. Mix together well.
Add soy sauce and cover to steam for approx 1-2 minutes.
Turn down heat a little to between medium and low.
Move rice mixture to one side of pan.
Spray clean side with cooking spray.
Add beaten eggs and scramble on that one side of pan only until eggs are fully cooked. When eggs are fully cooked, mix into rice mixture.
Top with green onions and serve.
Remove from heat immediately as rice will toast if not fully removed from pan and will become crispy.
