Coconut Shrimp: Submitted by: Sean D Turner | Date Added: 26 Jan 2020 Ingredients:

2 lb Medium Shrimp uncooked
3 med Zucchini sliced 1/4 inch thick
24 oz Coconut Milk
1 C Kraft Real Mayonnaise
1 med Yellow Onion chopped

Cooking Instructions:

Combine the coconut milk and the mayonnaise in a blender and mix until mayonnaise is no longer clumpy.
Transfer mixture into a pot, and add the sliced zuchinni, onions and shrimp.
Cover and let simmer for about 40 minutes or until the shrimp becomes a nice color orange.
Remove from heat and serve,

Serving Ideas: Serve over rice
