Governor's Fish in Coconut Milk
Governor's Fish in Coconut Milk: Submitted by: Cook Book | Date Added: 1 Jan 2010 Ingredients:

1/2 onion, sliced
1/4 cup vinegar
2 lbs. fish (Skipjack, mullet, dolphin or any island fish), sliced about 2 thick
1 green pepper, sliced
Salt and pepper to taste
1 1/2 cup thick coconut milk
1 clove garlic, mashed
1/2 cup water

Cooking Instructions:

1. Put all ingredients in a pot except coconut milk and cook for about 20 minutes on medium heat or until the fish is cooked.
2. Add coconut milk last. Remove from direct heat. Do not boil coconut. Serve hot with steamed rice.
