Salmon with Coconut Milk and Pumpkin Tips
Salmon with Coconut Milk and Pumpkin Tips: Submitted by: Cook Book | Date Added: 1 Jan 2010 Ingredients:

Cleaned pumpkin tips
1 medium onion, diced
1 tsp. lemon juice
1 cup water
1 can red salmon
1/2 cup coconut milk
1 tsp. salt

Cooking Instructions:

1. Boil pumpkin tips. Set aside.
2. Drain pumpkin in tips in a large pot, pour in salmon, onions, salt and lemon, and add water
3. Pour coconut milk into salmon mixture, cover, reduce heat and simmer. Serve with white rice.
