Shrimp in Coconut Milk - I: Submitted by: Cook Book | Date Added: 1 Jan 2010 Ingredients:

3-4 cloves garlic, crushed
2 cup thick coconut milk
Salt and pepper to taste
2 dz. Lge. Shrimp, cleaned
1 med. Green chili pepper (2-3 if you desire it to be hot)
1 med. Onion, sliced

Cooking Instructions:

1. Slightly cook cleaned shrimp.
2. In a large skillet, over medium heat, saute sliced onion, crushed garlic till soft.
3. Add coconut milk, bring to a boil, stirring constantly. Reduce heat to low.
4. Add shrimp, chili pepper, salt and pepper to taste.
5.Remove from heat and cover till shrimp is cooked. Serve warm with rice
