Chicken Chalakiles - II: Submitted by: Cook Book | Date Added: 1 Jan 2010 Ingredients:

1 cup coconut milk (optional)
1 cup rice (toasted or ground)
5 cup water
1/2 cup achote water
2 cloves garlic, chopped
Salt and pepper to taste
1 chicken fryer, chopped in small pieces
1 medium onion, chopped
2 Tbsp. cooking oil

Cooking Instructions:

1. Saute garlic in hot oil, then discard. In the same pot, add onion, chicken and achote water. Bring to boil.
2. Add toasted rice, stirring constantly. Continue boiling for 5 minutes, then add coconut milk, if desired.
3. Serve with hot rice or as a soup.
