Upside-down Pineapple Cake
Upside-down Pineapple Cake: Submitted by: Cook Book | Date Added: 1 Jan 2010 Ingredients:

* 4 slices pineapple; 1 Tbsp pineapple juice
* 1/4 cup walnuts or pecan
3/4 cup sweet butter
2 eggs
1 1/2 cup All-purpose flour
1 1/2 tsp baking powder
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 tsp vanilla
1/2 tsp salt
1/2 cup fresh milk

Cooking Instructions:

1. Melt 1/4 cup of butter in an 8x8 inch square pan. Sprinkle with brown sugar, arrange pineapple slices and nuts on bottom of pan and sprinkle pineapple juice.
2. Cream the remaining butter with granulated sugar; creaming well. Butter must be almost colored white and the sugar almost completely dissolved. Beat in the eggs and vanilla.
3. Sift the dry ingredients together and beat into the egg mixture alternately with the milk, beginning and ending with the dry ingredients.
4. Pour carefully over the pineapple slices and bake at 375 degrees for about 35 minutes or until done.
5. Let stand for 10 minutes before inverting on a serving dish. Serve warm if possible, with sour cream, if desired.
