Leche Flan (Custard-like variation)
Leche Flan (Custard-like variation): Submitted by: Jane Roberto | Date Added: 2 Jan 2010 Ingredients:

6 eggs, large
1 cup evaporated milk
2 cup filled milk
1 1/2 cup sugar
4 tsp. vanilla
1/4 tsp salt
1/4 cup water

Cooking Instructions:

STEP 1: Caramelize mixture
1. Dissolve 1 cup of sugar in cooking pot over medium heat, stirring constantly.
2. After sugar has thorougly dissolve, mix in 1/4 cup of water. Reduce heat and stir well for 1 minute.
3. Pour rapidly caramel mixture onto bottom of baking/serving dish.

STEP 2: Leche Flan
1. Beat lightly the eggs, sugar and salt in a mixing bowl.
2. Add milk and vanilla.
3. Pour content into carameled baking dish.
4. Place the entire baking dish into a larger pan filled with water, and bake at 350 degrees for 35 minutes. (To test for doneness, insert toothpick into the middle of the leche flan; it should come out clean.)
5. Cool to set before servnig.

Makes about one 8x8 inch baking pan.
