2 cups - grated sweet potatoes, cooked
1 teaspoon – baking powder
*flour – as needed
ΒΌ cup – sugar
*dash of salt

Cooking Instructions:

1. Mix sweet potatoes, baking powder, sugar, and salt together; adding flour last in small amounts until mixture forms a fairly heavy dough.
2. Fry in a deep hot oil.
3. Cook until golden brown.
4. Served sprinkled with sugar, plain or served with syrup.

*Instead of using fresh sweet potatoes you may substitute one can cooked sweet potatoes, mash. Or, one (1) can pumpkin of which to ad pie spices in small amounts.
