4 large, firm, rRipe, Ready to eat Bananas
1 package flour Tortillas, Thin, Mexican brand
1 Cup Hershey Semi-Sweet Chocolate Chips
2 Cups Peanut Oil, Canola or Coconut Oil
1 Cup Sugar, Granulated (brown or white)
2 Tablespoons Cinnamon, Ground
1 Tub Whipped Cream
1 Tub Vanilla Ice Cream
1. Peel the bananas and make a slice down the middle lengthwise. This cut will receive the chocolate chips later in the process.
2. Lay the flour tortillas on a table and place a banana long enough to fit inside but leaving at least 1 inch on each end to fold in after rolling like a lumpia.
3. Place the chocolate chips in the slices of banana and begin to roll, folding the edges in like you would when making lumpias or burritos.
4.Secure rolls with toothpicks.
5. Place oil in frying pan and heat at medium heat. Test the temperature of the oil by dropping a piece of white bread into the pan and if the bread turns brown in 1 minute, the oil is at the right temperature. Too brown in less than a minute, the oil is too hot.
6. Fry the rolls until golden brown. Remove rolls to a towel lined plate.
7. Mix Sugar and Cinnamon in a shallow bowl and roll the rolls in the sugar while they are still hot or warm.
8. To serve, cut the rolls in a diagonal in halves.
9. Serve with whipped cream or on top of a scoop of vanilla ice cream.
