3 Large potatoes
6 eggs
1 can chopped olives drained
1 jar pimentos drained
1/2 jar sweet relish drained
salt (to taste)
black pepper (to taste)

Cooking Instructions

1. Boil potatoes & eggs together in a large pot.
2. Potatoes are cooked when it is easily pierced thru with a fork.
3. Eggs are usually cooked at the same time as potatoes.
4. Let cool.
5. Peel potatoes and eggs and cut into small bite sized cubes. Do NOT mash!
6. Add olives, pomentos, & relish. mix. (we usually mix with clean hands making sure to get the bottom of bowl :)
7. Salt & pepper to taste.
7. Add mayo last, til it blends the ingredients together. Try not to add too much mayo.

Almost same recipe I use for potato salad except I add diced ripe olives to it also. I always get compliments on this type of p. salad. Some times I add a little celery salt also. Left by: Johanna Ledbetter (7 Feb 2011)

This recipe is an old favorite, I usually prepare when having Family BBQ and such. Instead of sweet relish, I use chopped dill pickles. . . Hellmann's Mayo is my preferred mayo. Left by: Rita Tenorio (26 Oct 2010)

This was quick. I had Potatoes from the night before(supper). OhBryan style(cubed). I used Black Pearls large Olives. a little lighter on the Relish. Mixed. Added pepper(no salt) Hellmann's mayo, mixed again then I added Fresh raw peas and a few cloves of garlic (finely chopped)from the garden. It was a meal in it's self. Good job Mel.
